Baker's Percentage Calculator

Calculate baker’s percentages from flour and ingredient weights, or scale an ingredient from a target percentage

In baker’s math, total flour is always 100%; every other ingredient is expressed relative to flour weight.

About the Baker's Percentage Calculator

Baker’s percentage expresses every ingredient as a percentage of total flour weight, with flour defined as 100%. This makes bread formulas easy to compare and scale even when the total batch size changes.

The percentages do not have to add to 100%. Flour alone is the reference 100%, and water, salt, yeast, fat and other ingredients are each measured relative to that flour base.

How to Use the Baker's Percentage Calculator

  1. Enter total flour weight.
  2. Enter the weight of each additional ingredient.
  3. Calculate each ingredient’s baker’s percentage.
  4. When scaling, choose a new flour weight or total dough target and preserve the same percentages.

How the Calculation Works

Baker’s percentage for an ingredient = ingredient weight ÷ total flour weight ×100.

To calculate an ingredient from a formula percentage, ingredient weight = flour weight × percentage/100. If multiple flours are used, their combined weight forms the 100% flour basis.

Worked example

Baker's Percentage Calculator Worked Example

1,000 g flour, 700 g water, 20 g salt

Water = 700÷1,000×100 = 70%. Salt = 20÷1,000×100 = 2%. The formula is therefore flour 100%, water 70%, salt 2%.

Result guide

Understanding Your Baker's Percentage Calculator Result

The system describes recipe proportions, not the share of total dough weight. A 70% hydration dough does not mean water is 70% of the finished dough.

Assumptions and Limitations

  • Ingredients are weighed rather than measured by volume.
  • All flour types included in the formula are counted in the flour base.
  • The same percentage convention is maintained during scaling.

Practical tip

Using This Result in Practice

Keep a formula in baker’s percentages even after you record gram weights. That makes it much easier to scale the recipe again or compare it with another bread formula.

Common questions

Baker's Percentage Calculator FAQ

Why is flour always 100%?

Baker’s percentage uses total flour as the reference base for every other ingredient.

Should the percentages add to 100%?

No. They normally add to more than 100 because flour itself is already 100%.

How do I calculate ingredient grams from baker’s percentage?

Multiply flour weight by the ingredient percentage expressed as a decimal.
