How we calculated it
About the Yeast Converter
Yeast Converter helps translate between common baking yeast types such as fresh yeast, active dry yeast and instant yeast. The forms contain different proportions of water and have different activity per gram, so they are not normally substituted one-for-one by weight.
Conversion ratios vary somewhat by brand and baking practice. The calculator provides a practical scaling relationship, while the product label or tested recipe should take priority when it specifies a different substitution.
How to Use the Yeast Converter
- Enter the yeast quantity in the original recipe.
- Choose the source yeast type.
- Choose the target yeast type.
- Convert and check the package instructions when the brand gives its own substitution ratio.
How the Calculation Works
A common baking approximation treats instant yeast as requiring less weight than active dry yeast, while fresh compressed yeast requires more weight because of its higher moisture content.
The converter applies the selected source-to-target factor to the yeast weight. It changes yeast form only; it does not automatically adjust fermentation time, temperature or hydration.
Worked example
Yeast Converter Worked Example
10 g instant yeast to active dry yeast
If the selected conversion uses active dry at about 1.25 times instant yeast, 10×1.25 = 12.5 g active dry yeast.
Result guide
Understanding Your Yeast Converter Result
The converted amount is a starting substitution for yeast quantity. Dough fermentation can still behave differently because yeast age, temperature, sugar and salt levels affect activity.

Assumptions and Limitations
- The selected conversion factors match the baking convention used.
- Yeast is measured by weight for precision.
- Fermentation conditions remain outside the unit conversion.
Practical tip
Using This Result in Practice
When changing yeast type in a time-sensitive dough, watch the dough rather than only the clock. Even a correct weight conversion may ferment at a different rate under your actual kitchen conditions.

Common questions
Yeast Converter FAQ
Can I replace instant yeast with active dry yeast one-for-one?
Often not by weight; active dry commonly requires a somewhat larger amount, depending on the chosen conversion.
Why does fresh yeast weigh more?
Fresh compressed yeast contains much more water than dry yeast.
Will converted yeast give exactly the same rise time?
Not necessarily. Brand, freshness, dough temperature and formula all affect fermentation speed.
